Chef


When I greet Marco as Chef, it is not because I've forgotten his name. It's because I have a respect, and even a reverence for the career he has chosen. In fact, I would go even further and say it is more than a career, it is a calling. The feeding of people exists on the edge of the sacred. It is no accident that religious and cultural rites from Catholic communion to Japanese tea ceremony have elevated the act of consuming. Whether we are having a beer in Steiner's or eating a waffle Denny's, we are nourishing the spirit as well as the body. It is fundamental to our survival. We can live by rote, or we can stand amazed at the wonder of our existence.

Not only does Chef Marco help turn the great wheel that is the Circle of Life, he's a damn fine shooter as well. It's a matter of focus and intent. Sounds simple enough. Why is it so hard?

So, next time you find yourself at In-n-Out and a pimply-faced kid hands you your triple burger with fires on a red plastic tray, cross yourself, genuflect, and get down on one knee and say a prayer. You are in church.

It now seems Bill "Babysitter" Sykes will not be getting out of the slammer any time soon, so we've asked Travis "You talkin' to me?" Bickle to come in for an interview.
